Holy canneloni

I think I need to declare a moratorium on grocery shopping. I just got a wild hair and inventoried my canned goods. I have 25 cans of assorted beans, for starters. At least ten cans of tomato products, and similar amounts of corn and green beans. This is thanks largely to the weekly food giveaway---most of the aforementioned stuff comes from there.

I feel a little queasy at the thought of all those beans---although I'll probably end up mixing them into bean-and-corn salad---I mean, I like beans, but I foresee eating them daily for the next month. Then, too, I've got rice stockpiled as well. beans and rice are good together...and I'm not hurting for pasta, either.

It's a question of cooking---I've gotten out of the habit. It's not like boiling water for pasta is complicated, just time-consuming, and I lean toward instant gratification. I'm starving---nuke it or slap it on a piece of bread and it's ready to eat. With the exception of fried eggs. Eggs are one thing I'll cook, even if I'm tired.

At this rate, I'll achieve lift-off by New Year's...twenty-five cans of propellant later....

Hey, there's a thought! I love the version they do at Olive Garden...it shouldn't be that hard to concoct something similar.

We make it meatless- I just saute some onion and garlic in oil, drain and rinse the beans, add and simmer in the oil- add some tomato sauce and water to desired thickness. I also put parsley in if available and sometimes chopped carrots. When available, I add some small pasta or torn up spaghetti pieces - Salt and pepper to taste- Yummy! Economical and healthy.

I've got some packaged broth, but actual meat...not unless I defrost something. Which I probably ought to do. I have some pork ribs---REAL pork and beans, yum!

Gracious amount of beans, girl! :D I love vegetable soup with kidney beans -- it's a perfect winter soup.

What I have the most of are pinto beans and pork and beans, although I've got some light and dark kidneys as well. AND black beans AND black-eyed peas and even a couple cans of garbanzos (which makes me think of George Carlin every time).
