Jan. 18th, 2008 01:05 pmThis morning I polished off the last of the tuna and cheese quiche for breakfast, and I was sorry to see it go. I wasn't up for the potato shell process quite so soon, so I whipped up a box of cornbread muffins and spread it in the bottom of my big glass pie dish. (I added 2 tsp of sage to it to give it a flavor more like dressing.) While that was baking, I chopped up two sweet onions, a bunch of green onions, the last of my white mushrooms and a handful of portobellos and stirred them around in a warm skillet. Placed them in the bottom of the cornbread shell when it came out of the oven, and whipped up the milk and eggs. Added a couple quick dashes of Worcestershire sauce and dumped it over the veggies. I haven't tasted it yet because I'm still full of breakfast, but it looks lovely. And as a side benefit, I've discovered a MUCH better way to fix eggs than frying them!
