The other day, I had some wonderful shepherd's pie and have been thinking about it ever since. It seemed fairly simple, and I'm attempting to recreate it.

Publix has lean ground beef on sale this week. I browned and peppered and drained just over a pound of that and put it in the bottom of my dish. Added a can of corn, drained, and stirred it and the beef together. It was a little full, so I spooned off a bit of it for a nibble and found it good.

For the potatoes, I smoothed a package of ready-made country-style mashed potatoes atop the corn and beef mixture and bestowed a generous handful of shredded cheese (between 1/2 and 2/3rds of a cup, I'd guesstimate).

Per the potato directions, it's baking at 350 for 25 minutes. Should be yummy!

I've heard of folks making it with a pie crust but yours sounds much better!

I think next time I'll add a little onion to it, but yeah, it's pretty good. I don't know why I'm always surprised when I fix something and it comes out good. I'm not a fancy cook, but I'm not going to wind up on "America's Worst Cooks", either.

I first had Shepherd's Pie in England (natch). I was 22 and never heard of it before, but it was absolutely delicous - and very filling! I've had it a few times since (in the US) and it was good, but nothing like that first time.

I think it's easy to fix, which is a point in its favor. I was fairly hungry this afternoon and scarfed down almost half of it. But hey, could be worse, could be fried....

sounds nummy. I've seen it on the menu at some of the pubs I've hung out at but I've never ordered it (I'm more of a fish and chips gal.)
