Batter up!
From China to the local IHOP, what's your favorite meal involving pancakes?

Growing up, my mom made what we always called Norwegian pancakes. The original recipe was my Norwegian grandmother's, although I have it on good authority that Mom's were better.

They were very thin, like crepes, and Mom created them in her trusty cast-iron skillet. Peter once said that Mom's pancakes had barely enough flour to hold the eggs together, but I just remember how good they were. There were vanilla and orange extracts in the batter; I've always thought that restaurant pancakes taste bland and floury compared to them.

Mom would made a quantity of them, folding them, layered, into one of her classic Corningware casseroles to keep warm. We all sat around the kitchen table and I'd take a pancake and unfold it and gently baste a pat of butter across the still-warm surface. Take a slice of American cheese, fold it into quarters lengthwise, and run them along the fold-line. Roll the pancake around the cheese and drizzle with Log Cabin syrup. Eat. Repeat until stuffed or Mom refused to make any more, whichever came first.

I was too young at the time to think to ask for details of the process or the recipe, which wasn't written down---and to the best of my recollection, we never had them after we moved to Florida when i was 13---but about once a month during my childhood, that was our special Sunday brunch.

My favorite would be moo-shu pork served up rolled in those delicious thin Chinese pancakes. Nom!

I like pancakes okay, but as a breakfast food I actually like French toast better. I had some in St. Augustine made with real French bread, butter and cinnamon, and it was incredibly delicious.

I like pork egg foo yung, as long as they don't put green peas in it. I regard that as an abomination. Haven't had that in a while.

I'm more likely to make french toast than pancaskes---and I've never attempted the Norwegian variety---made with Texas toast (the extra thick slices). The St Augustine version sounds yummy!

You totally had me sold on those pancakes (I'm more of a french-toast girl, myself) .... until you said CHEESE.

I love cheese. But on a pancake? Drenched in syrup?

*turns green*

Maybe it's one of those things you grow up with that's normal to you? (At age 11, I wasn't sold on the idea of cream cheese and jelly, until my friend made me try it.) Although these days, I don't DO American cheese. Maybe a nice white cheddar.)

I only ever eat pancakes at restaurants now and not that often. (I like them, but ideally I avoid simple carbohydrates and sugar - I feel much better when I do and think I'm insulin-resistant, so it makes sense to - but we don't live in an ideal world!) When I was a kid, we'd put peanut butter on our pancakes before the syrup. My mom did it, her grampa did it. My dad thought it was horrifying! It's very good.

Isn't it funny what some people think is odd? I like chocolate milk on my cereal and one of my friends is squicked. No clue why.

I was turning green too when I read cheese and syrup, but then I understood what American cheese is, and I can actually imagine that it kind of works with syrup. Actually that may be the secret to enjoying American cheese ...

I'm craving ten kinds of pancakes plus french toast now. It's been ages I had either!

Pancakes does sound good. However, I've never been any good at cooking them myself, and right now hiring a chef is out of the question.
