Ever since that pancake post a few weeks ago, I've been craving pancakes. Not even Norwegian pancakes in particular, just pancakes in general---this cespite the fact that my previous attempts at pancakes have been less than successful.

Since the urge wouldn't go away, I got a little jar of pancake mix at Aldi. Had it for a week before the yen became unbearable. This morning, I finally got to the point where nothing but pancakes would do. Not fried eggs, not bread and honey---no, it HAD to be pancakes.

Thinking it over and remembering my mother's ambrosial pancakes, I added a capful of vanilla extract to the water before pouring it into the mix. To give it a little more kick, I added a few shakes of cinnamon and a dash of ginger to the mix before I added the water.

Apparently, I've cultivated some culinary prowess since my last attempt at pancakes. They were neither burned nor runny, and they didn't taste like nasty lumps of fried flour, either.

I added dabs of butter to each as the second side was cooking, and drizzled a bit of Aldi honey over them. Quite tasty! Mind you, the additives were barely noticable, but I can up the spices a bit next time.

So you understand my feelings. I tried to shrug it off, but at least these only cost 99 cents, as opposed to $5-6 at Denny's or IHoP.

Understand? You are talking to the original foodie. I invented Food Network in my head years ago! ha ha
I just enjoy good, basic food. I refuse to pay high prices for pancakes that typically don't live up to my expectations.

There's a restaurant up in Deland---and calling it a restaurant may be overstating it somewhat. From the outside, it looks like a cinder-block bunker. Kat and I were picking GK up from the Deland airport one time and got there early enough before her flight was due for lunch. It looked like a dive, but the sheer number of vehicles outside that it had to have something going for it.

Inside it's tacky faux wood paneling and plastic flowers. But the corn fritters were HEAVEN. And the barbecue beef on cornbread---! Amazing. Best ever, and I remember the original fat Boy's.

I don't remember the name of the place, but I'll bet I could find it again if it's still there.

It was very satisfying. I've been happy with most of Aldi's products. I was underwhelmed by some of their lunchmeats, and IMO, their mac'n'chesse is crap. Even the macaroni is...off. Otherwise, though, their frozen stuff has all been good, their diet sodas are drinkable, and their faux butter is the best. Any they have yummy affordable munchies from marzipan to crackers.

I thought their mac and cheese was off too. It just didn't have any oomph at all to the cheese sauce. But the baking stuff is good, especially their chocolate, cocoa, vanilla, and spices. I use their garlic salt all the time because it has big, delicious chips of dried garlic in it.

My friend Miss V. is just wild about their garlic hummus, and I bring her a couple of cartons every time I go shopping.

They had some lemon hummus a while back that I rather liked. And they tend to get a good variety of cheeses. Most recently a very nice smoked Swiss.

I've been quite satisfied with their regular pasta- like elbow macaroni and spaghetti. Their Italian brand is good, too. We've had the rigatoni. If you ever run across the manicotti crepes in the frozen section, grab them. Paired with whatever sauce you like, they are scrumptious.
Never had the diet soda or the hummus but will try the hummus for sure- off diet soda these days. :( Their baking products are top notch- the vanilla is better than most others on the market.

Their frozen lasagna isn't bad either. (I know you make your own, but I'm not Italian; I'll settle for a good frozen one.)

Well, I am an avid lover of cheese but now that I am doing the cholesterol walk of shame every night, I've had to refrain. I really miss my cheese!!! Nothing like coming in from work and cutting a hunk of cheese,dipping some garlic stuffed olives and grabbing a few saltines.

HA! your post had inspired me to make pancakes as well! I made them from scratch, just eggs, milk, flour, salt and water (with the egg-whites whipped), and they came out nice. (Problem was only, I made too much. I was eating pancakes and pancake leftovers for days, even rolled them into some kind of cannelloni in my despair. And now I'm done with pancakes for a while :)
