I've finally gotten around to throwing that brisket into the slow cooker. My method: Cut brisket in half so it'll fit. Put in the first piece, fat side up, so the fat will cook down into the meat. Layer half a jar of sauerkraut over it. Cover it with the second piece in the same manner, and the remainer of the 'kraut. Pour in a bottle of beer. (My brew of choice is JW Dundee's Honey Lager.) Turn on crockpot and go about your business.

That assures me of dinner for the rest of the week....

After the success of the muffins, I dug out my crockpot last night so it would be ready to go in the morning. I've had a smallish slab of corned beef brisket awaiting The Treatment.... This morning, I cut the slab in half (It fit in the medium-sized crockpot--it was definitely *not* large enough for my BIG slow-cooker--this particular brisket was only about two pounds), dumped a can of sauerkraut over it, and lubricated it with a bottle of beer. (JW Dundee's honey lager--I don't DO cheap beer!)

I had that brisket on my mind all day! Not because I'm one of those people who worries that the crockpot is going to burn my house down--it hasn't yet and besides, it's insured--but because the thought of Real Beef made my mouth water. I've been living on tuna and crackers, fried egg sandwiches, and variations of rice or noodles for so long that red meat is a genuine treat.

The visiting royalty put a damper on the mood of the whole office--it was like somebody died, and not in a good way!--but they left in the early afternoon, and things lightened up after that. None of them said "boo" to me, so I'm still employed....

The house smelled wonderful when I walked in the door. I managed not to stand over the crockpot and dig in with a fork, but it took willpower! I divvied it into three decent-sized portions, one for dinner and two for later--lunch tomorrow, and the remainder may be dinner Friday or Saturday--and split a can of carrots with it. (My carrots are better, but even if I had fresh carrots on hand, I wasn't willing to do *quite* that much cooking.)

Dinner was delicious. If I had any money, I'd go snag another hunk of beef. That piece was under $6--throw in another couple dollars for the kraut and beer, and I'm getting three meals for about $3 each. Which isn't bad, except I've got two dollars and change cash money to last until this time next week.... Let's hope there isn't a run on brisket in the meantime!
